This warm and cheesy Baked Roast Beef Sliders Recipe is the perfect game day appetizer, or weeknight family dinner. Simple to make and ready in about 30 minutes!

Sliders are seriously my happy place. I love making this Baked Roast Beef Sliders recipe for a variety of occasions including a quick weeknight family dinner, game days with friends or even for a potluck. Every time they get rave reviews and everyone comes back for more.

Ingredient Notes

  • Hawaiian Rolls: If you cannot find this specific brand that is find, you can use any generic brand of slider buns.
  • Cheese: I used a combination of cheddar cheese, mozzarella cheese and Coldy Jack cheese blend . I prefer to use shredded because it melts easier and forms a better seal on the sandwich. You could use sliced if you prefer, but if will take longer for the cheese to melt comply.
  • Spices: I used a simple combination of garlic powder, onion powder, ground mustard, poppy seeds, salt and pepper. This combination pairs wonderfully with the roast beef and compliments the flavor well. Plus is adds even more flavor than just your standard butter topping.
  • Horseradish Mayo: I like to use a combination of mayo and horseradish sauce on my sliders. You could use jut horseradish sauce if you love the flavor. I like to serve mine to my kiddos and the may helps cut the strong flavor back a bit and it doesn't take over the entire flavor of the roast beef slider.

How to Make Baked Sliders

  1. Prepare the Topping
    Begin my melting the butter in a small microwave bowl. Add in all the spices (except the poppy seeds), Worcestershire sauce then whisk to combine. Set aside.
  2. Assemble the Sliders
    Slice the Hawaiian rolls in half lengthwise and open the two halves. Spread the bottom of the buns with horseradish mayo in an even layer. Next, lay the roast beef over top then layer on the shredded cheese. Place the bun tops back on top over the assembled slider.
  3. Baking the Sliders
    Place the assembled sliders in a prepared 7x11 inch baking dish. Brush over the prepared topping the sprinkle over some poppy seeds. Bake the sliders for 20-25 minutes in a preheated oven at 350 degrees F, or until the cheese is melted. If the tops are getting to brown before the cheese melts place some foil over top of the sandwiches. When the beef and cheese sliders are finished, serve warm with a spatula and enjoy!

Never Throw Food Away: Store leftover roast beef sliders in an airtight container in the fridge for up to 3 days. If you want the cheese to get melty and warm, return the sliders to the oven (about 15 minutes) or microwave (about 20 seconds) before enjoying.

When serving the sliders as a main dish to my family I love pairing these with a simple salad, like my Kale Caesar, roasted vegetables, homemade french fries, or even a bowl of sliced fruit.

What cheese goes best with roast beef?

I have used a combination of Mozzarella, Cheddar, and Colby Jack cheese because both me and my kids love them. I also like the flavor combination and meltly goodness they yield. Some other cheese options you could try and Pepper jack or Provolone cheese.

Can sliders be made ahead of time?

Yes, you can make these beef sliders up to a day ahead of time and store them in the fridge covered overnight. Follow all the recipe instructions, then store them in the fridge covered. The sliders will develop more flavor in the fridge with marinade topping getting to sit on them longer. Before baking remove the sliders from the fridge and let them come to room temperature before baking.

What toppings go with roast beef?

Personally, I have kept the topping to a minimum because my kiddos are not a fan when they are loaded down with veggies. However, if serving to adults (or more adventurous kids) some grilled onions, mushrooms or tomatoes are the bomb on these. Just try and stick to only one additional topping, because they will be soggy and fall apart if you load too much on.

Pro Tips

The Perfect Slider: Sometimes depending on type of cheese you use on the sliders it could take longer for 20 minutes for it to completely melt. If this happens and the tops of the beef and cheese sliders begin to get too brown, use some foil to cover the sliders to keep the tops from burning and allowing the cheese to melt through completely.

The Best Butter: Do not skip the melted butter and spices on these baked sliders. The butter helps crisp up the buns and the additional spices add a lot of flavor to the sliders elevating them from your typical sandwich recipe.

Kid Approved! These sliders are a HIT with both my boys. I like to keep these simple with just roast beef, cheese and my mayo sauce so there isn't too much going on for them. The gooey cheese holds everything together making them easy to hold (yes, even my baby can hold them) and the crispy fluffy buns make the perfect bite.

  • 12 Hawaiian Rolls
  • 8 Oz Thinly Sliced Roast Beef
  • 4 Oz Cheddar Cheese Shredded
  • 4 Oz Colby Jack Cheese Shredded
